A perfect blend of crunchy toasted pecans, chewy caramel, and rich melted chocolate, these classic turtle candies make a delicious homemade treat—great for gifting or indulging yourself!

Ingredients:

  • 12 oz soft caramels (store-bought or homemade)
  • 6 oz pecan halves
  • 8 oz semi-sweet chocolate (chips or bars)
Instructions:

1. Toast the Pecans

  1. Preheat your oven to 350°F (175°C).
  2. Spread the pecan halves in a single layer on a baking sheet.
  3. Toast for 8-10 minutes until fragrant and lightly browned.
  4. Let them cool completely.

2. Melt the Caramel

  • Microwave Method: Heat the caramels in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  • Stovetop Method: Melt the caramels over low heat in a saucepan, stirring constantly until smooth.

3. Assemble the Turtles

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Arrange the toasted pecans in clusters of 3-4, mimicking a turtle shape.
  3. Spoon about 1 tablespoon of melted caramel over each cluster.
  4. Let the caramel set for 10-15 minutes.

4. Melt the Chocolate

  • Microwave: Heat the semi-sweet chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  • Double Boiler: Melt the chocolate over simmering water in a double boiler, stirring until fully melted.

5. Coat with Chocolate

  1. Spoon 1 tablespoon of melted chocolate over each caramel-pecan cluster.
  2. Spread evenly to cover the caramel.
  3. Let set at room temperature for 1 hour or refrigerate for 20-30 minutes to speed up the process.

6. Serve & Store

  • Once set, your homemade turtle candies are ready to enjoy!
  • Store in an airtight container at room temperature for up to 1 week or in the refrigerator for up to 2 weeks.
